| Abstract | This study investigated the physical changes including oxygen (O2) and carbon dioxide (CO2) gas content, weight loss, color change and firmness of peeled durian stored at 4 ? C for 15 days in "Ozone Box" odor locking package compared to commercial package. Testing plan was a Complete Randomized Design (CRD) experiment. Statistical analysis was conducted by comparison of the mean t-test at 95% confidence level. It showed that the oxygen gas in Ozone Box decreased significantly when compared to commercial package. On the other hand, carbon dioxide increased dramatically in the first 5 days of storage. It has been indicated that Ozone Box has complete barrier properties against ingress of oxygen and carbon dioxide through the development of the air tight seal structure. The durian in Ozone Box has less weight loss than commercial package in 5-7 days of storage. The Ozone Box absolutely retained moisture inside the air tight seal structure comparing to the commercial package which had a seal opening. There was no significant difference of the color and firmness of the durian in both packages throughout the storage period. |
