Abstract Noncommunicable diseases or NCDs have been known as causes of dead in unhealthy youngsters and middle age people. This can lead to the imbalance and accumulation of free radicles in human body. The consumption of antioxidants from medicinal plants could be the choices in preventing NCDs. This research had focused on the influences of the extracting methods on the yield and pharmacological activity of the extracts from selected Thai medicinal plants. They are licorice root, clove and chrysanthemum flowers. This research also studied the influence of supercritical CO2 extraction process on the characteristic of chrysanthemum flower extract in comparing to maceration, shaking and Soxhlet extraction process. The results revealed that the maceration method used in extracting chrysanthemum flower gave the highest extracting yield of 9.70 % (w/w), while its antioxidant activity was very low as its IC50 was 78.28 mg/mL. While the antioxidant activity of the extract from clove flower was found to obtain high IC50 value of 11.55 mg/mL, which was close to the IC50 value of ascorbic acid. However, the extracting yield of the clove flower with maceration method gave the moderate yield of 8.05% (w/w). As a result, chrysanthemum flower was then selected to study on a variety of extraction method to obtain the chrysanthemum flower extract, which gave the highest antioxidant activity. The increasing on the extraction pressure of supercritical CO2 extraction process, causing CO2 density increased, was found to increase the extraction yield and antioxidant activity of chrysanthemum extract significantly (p ? 0.05). This extracting condition also caused many substances in chrysanthemum flower could be dissolved, causing the yellowish color of the chrysanthemum flower extract turned to be darker. Moreover, the results also showed that the Soxhlet method used in extracting chrysanthemum flower gave the highest yield of 23.09% (w/w) in shorter period. The mixing process was also found to help shorten the period of the extraction by increasing mass transfer rate due to the increase of mechanical force within the system. The repeat of the mixing process could result in increasing the yield of this extraction process. In conclusion, to increase the yield of chrysanthemum flower extraction, supercritical CO2 flow rate, time length of the extraction process and the amount of dry chrysanthemum flower powder should be increased.
