| Abstract | Physiological and compositional changes of 'Kuylin' hybrid netted melon (Cucumis melo L.) fruit were investigated in relation to the characteristic quality changes of the fruit. Volatile compounds from mesocarps analyzed by the headspace-solid phase of microextraction/ gas chromatography/mass spectrometry (HS-SPME/GC/MS) were specified through each stage of ripening maturity. During fruit development, volatile compounds and respiration rates of hybrid netted melon increased after a rapid increase in ethylene production was monitored in the cavities. The production of total esters was found to be correlated with loss in firmness and increases in total soluble solids and pH at the beginning of the onset of pre-climacteric stage. This is followed by a rapid rise in sugar content, especially sucrose, until a maximum is reached at the climacteric peak. No ester compounds and a few alcohols were detected in unripe hybrid netted melon (30 and 35 day after anthesis; DAA) in which C6 and C9 aldehydes were predominant. Unripe melon mainly contributed hexanal, (E)-2-hexenal, (Z)-6-nonenal, (E,-Z)-2,6-nonadienal and 2-nonenal. After the onset of the ethylene climacteric (40 DAA) and during the late climacteric phase (between 45 and 50 DAA), numerous aroma volatile related compounds, namely straight chain ester (hexyl acetate and butyl acetate) and branched chain ester (2-methylpropyl acetate and 2-methylbutyl acetate) increased progressively through the over-ripe stage. It is suggested that the presence of these compounds can be used to indicate when the fruit should be harvested. The presence of 2-methylbutanol, 2-methylpropyl acetate, butyl acetate, ethyl butyrate, 2-methylpropyl propionate, 2-methylbutyl acetate, pentyl acetate, 2-methylpropyl butyrate, hexyl acetate and phenylmethyl acetate can be used to indicate the harvesting maturity stage for 'Kuylin' hybrid netted melon. The optimum maturity for fresh consumption would be 40-45 DAA for 'Kuylin' hybrid netted melon. |
