| Abstract | This paper presents the design and development of small electrode chamber for liquid food pasteurization by using pulse electric field. The developed co-field chamber is suitable for continue pasteurization process. Electric field chamber for buildup electric field inside an electrode chamber at PEF Zone has radius and volume equal to 5mm and 785mm3 respectively. From theoretical computation, power and energy was used to generate the electric field at PEF Zone about 15MW/mL and 22.5J/ mL respectively, when the value of V0 is 30kV, 1.5?spulse width and conductivity 0.3S/m of liquid medium. The finite element method is used for electric-field strength analysis at PEF Zone - inner electrode chamber. Therefore, the purpose of this paper is to study intensity of electric field, which is suitable for microorganism inactivation. From the analysis results show that, the electric-field strength was directly proportional to voltage V0 of electrode. When value of applied voltage V0 is between 10kV and 100kV, the electric field strength was equal to 2.36kV/mm - 23.58kV/mm. In order that, at 30kV of voltage V0 can be used to inactivate the E.coli, S.Aureus, P.Fluorescens and S.Cerevisiae. Electric field strength at PEF Zone was more than 1.5kV/mm that also was more than critical electric field of those bacteria and yeast membrane |
