| Abstract | 1. The comparison of non-aeration and aeration during steeping and germination of rice malt was examined in this research. The weight gain, alpha-amylase, beta-amylase activities and the total reducing sugar in rice malt was determined and the scanning electron microscope of starchy endosperm presented a modification of malted grain. The alpha-amylase activity in rice malt from aeration process was higher than that found in non-aeration processes significantly (p<0.05) at the first 5 days 2. whereas, beta-amylase activity was found in the same range. However, the total reducing sugar extracted from aeration process malt was greater than that found in the nonaeration process malt, which could support shoot and root growing and caused more final weight gain of aeration process malt. The eroded starch granules and pin hole endosperm could be detected in the rice malts. Therefore, the aeration process could stimulate strong germination rate, amylolytic enzyme activities and starchy endosperm modification. |
