บทคัดย่อ

การสํารวจ รวบรวม และศึกษาการใช้ประโยชน์จากพืชอาหารพื้นถิ่นในจังหวัดพิษณุโลก ได้ดำเนินการสำรวจระหว่างเดือนตุลาคม 2557 ถึงเดือนกันยายน 2558 โดยการสัมภาษณ์ปราชญ์ชาวบ้านของจังหวัดพิษณุโลกในทุกอำเภอ อำเภอละ 3 คน ทำการสำรวจและเก็บตัวอย่างพรรณไม้ที่นำมาเป็นอาหารในพื้นที่ชุมชน พื้นที่สวนครัว ตลาดในชุมชน และจากป่าธรรมชาติ เพื่อนำมาใช้ในการระบุชื่อวิทยาศาสตร์และแหล่งอ้างอิงที่ถูกต้อง มีการบันทึกข้อมูลต่าง ๆ ได้แก่ ชื่อท้องถิ่น การใช้ประโยชน์ การขยายพันธุ์ ลักษณะสัณฐานวิทยาของพืช และนิเวศวิทยาของพืช ผลการศึกษาพบว่ามีพืชที่ใช้เป็นอาหารจำนวน 68 วงศ์ 138 ชนิด ส่วนใหญ่
ที่พบเป็นไม้ล้มลุก นอกจากนั้นเป็นไม้ยืนต้น ไม้เลื้อย ไม้พุ่ม พืชน้ำ และเฟิร์น ตามลำดับ ตัวอย่างพืชที่สำรวจได้เก็บตัวอย่างพืชและนำมารักษาไว้ ณ คณะเทคโนโลยีการเกษตรและอาหาร มหาวิทยาลัยราชภัฏพิบูลสงคราม โดยจัดทำคำบรรยายลักษณะ สถานที่พบ ส่วนที่ใช้รับประทาน วิธีการนำมาประกอบอาหาร สภาพนิเวศวิทยา และภาพสีของพืชแต่ละชนิด

Abstract

Survey, collection and application of indigenous food plants in Phitsanulok province were undertaken from October 2014 to September 2015. The study was carried out by interviewing three local wisdom people in each district and undertaking field surveys in and around the villages, at the home garden, the local market and the natural forest to record information about plants and their usages. The survey records included local name, utilization, propagation, plant morphology and plant ecology. The results indicated that 68 families and 138 species were used as food crops most of them are herbaceous plants, the others are trees, climbers, shrubs, aquatic plant and ferns. The collected specimens were preserved at the Faculty of Food and Agricultural Technology, Phibulsongkram Rajabhat University. Description, occurrence, the edible parts, the process of cooking, as well as colour print of each specimen were prepared.
