Abstract The objectives of this research were to study Tilapia nilotica drying using hot air and to find out the appropriate thin layer equation for predicting the drying kinetic of Tilapia nilotica. To achieve these purposes, experiments were conducted on the following conditions: air velocities of 1.0, 1.5 and 2.0 m/s and drying temperatures of 50, 60 and 70 =C. The effects of drying conditions on moisture ratio, drying rate and specific energy consumption were investigated. From experimental results, it was revealed that drying rate and specific energy consumption increase with increment of drying temperature or air velocity. Furthermore, it was found that thin layer equation providing the highest coefficient of determination (R2 , 0.99899) and the lowest root mean square error (RMSE, 0.0092) is Two term equation
