| Abstract | The purpose of this study was to determine the carcass characteristics of black bone chickens (Fah Luang). The carcass features and meat quality of black-bone chickens were compared from the breeding pairs of Fah Luang 1 (MA) and Fah Luang 2 (MJ). The experiment was conducted using a completely randomized design (CRD) and divided into 4 breeding pairs: group 1 (MA x MJ), group 2 (MA x MA), group 3 (MJ x MA), and group 4 (MJ x MJ). Subsequently, at 16 weeks of age 48 chicken (male and female chickens) from each group were taken and then slaughtered. The different parts of the chicken carcass were weighed. The results showed that the carcass percentage and carcass composition of male and female in all experimental group was no significant difference (P>0.05). In terms of meat quality, it was found that the pH value at 24 hours of the thigh meat in the black bone chicken group with MJ male breeder was higher than the other experimental groups (P<0.05). However, the breast meat from group MA x MA had a lower cooking loss percentage than the other experimental groups (P<0.05). The results of this study showed that the carcass characteristics there were no differences between the MA and MJ breeders. While using MA breeders has a positive effect in terms of meat quality. This might be an alternative for breeding pairs to promote the farmer to raising Fah Luang black bone chickens. |
